    A day late, This was our dinner last night. Loaded potato soup. Myself and @Sporadic cooked it together. Sadly I only got to try two bites of it no thanks to an upset stomach :(

    Stir fry. Cut up boneless skinless chicken beasts into cubes. Let them marinade in a mixture of orange marmalade, Simply Orange juice, teriyaki sauce and soy sauce for an hour. Then I let the chicken slowly cook in the wok till the juices cooked down. Then I added in broccoli, carrots, onions, red bell peppers, water chestnuts, mushrooms and celery. Then I added in teriyaki and soy sauce to slow cook until finish.

    Once it was done, tossed in Planters cashews.

    Boneless ribs. Took 3/4 of a bottle of sweet bbq. Poured into a bowl and mixed in 3 table spoons worth of honey, a table spoon of brown sugar and a teaspoon of garlic salt.

    Chicken and cheese quesadillas. Since the sirloins we had went bad in 2 days :/ guess they were on sale for a reason. SOO ended up improvising and using the left over cooked chicken in the fridge to whip these bad boys up :)

    And you cant have dinner without a drink. So to complete @Sporadic made this DELICIOUS koolaid. Blue raspberry lemonade Kool-aid with 2 oranges and 2 lemons chopped and added to the mix.

    3 hour progress.

    Started the marsala sauce. Prosciutto and mushrooms simmering in the olive oil and chicken drippings. Almost time for the wine to be added.

    Alright. Been at it for close to 3 hours but here it is. Chicken marsala with prosciutto. Creamy ricotta, aged parmesan and romano cheese stuffed tortellini. And delicious garlic bread.

    Posting the recipe for this one cause it was so amazing.

    Ingredients

    4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
    All-purpose flour, for dredging
    Kosher salt and freshly ground black pepper
    1/4 cup extra-virgin olive oil
    4 ounces prosciutto, thinly sliced
    8 ounces crimini or porcini mushrooms, stemmed and halved
    1/2 cup sweet Marsala wine
    1/2 cup chicken stock
    2 tablespoon unsalted butter
    1/4 cup chopped flat-leaf parsley

    Directions

    Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them; pound with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly.

    Heat the oil over medium-high flame in a large skillet. When the oil is nice and hot, dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess. Slip the cutlets into the pan and fry for 5 minutes on each side until golden, turning once – do this in batches if the pieces don't fit comfortably in the pan. Remove the chicken to a large platter in a single layer to keep warm.

    Lower the heat to medium and add the prosciutto to the drippings in the pan, saute for 1 minute to render out some of the fat. Now, add the mushrooms and saute until they are nicely browned and their moisture has evaporated, about 5 minutes; season with salt and pepper. Pour the Marsala in the pan and boil down for a few seconds to cook out the alcohol. Add the chicken stock and simmer for a minute to reduce the sauce slightly. Stir in the butter and return the chicken to the pan; simmer gently for 1 minute to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

    I'm having a very dessert filled day today.
    I made a caramel bread and butter pudding with butterscotch and chocolate chips (I have the pre-baked picture only because it didn't last very long once it was out), roast beef with cheese sandwich and a finally chocolate ganache pie with a toasted meringue. I was too lazy to wait for the ganache to set a bit so my meringue ended up with chocolate on it.
