Would you be happy to forget every anime you've ever seen only to watch them again?

Very interesting thought there @AngeloDaniele. I'd have to go with no. I've seen a lot of stuff, and even I can't tell if I'll like something before I start it. Thinking that I'd have to start again on my list that makes up more than 258 days worth of anime watched [without rewatches included], is madness.
There have been amazing anime, but what if hypothetically you watch one you don't like first and are no longer an anime fan? What would I do then?

Yes, good point. Still If I did end up watching them all again I would have my anime list to guide me so I think the likelyhood of me watch a bad anime and not become an anime fan the second time round seems slim.
But there's still the point you made about lost time and progress, If you had amnesia would the thought of all that lost time really prevent you from wanting to watch anime that from your new perspective you haven't seen.

I'm good, because I don't want the overbearing feeling of nostalgia. Plus, I'd forget all the references that my friends (whom are otakus) throw out only to feel dumbfounded.

No because that means I will undoubtedly watch Evangelion again and then get exposed to abomination of a character that is Shinji Ikari.
