I think it's the eyes that get me in all honesty they confuse me with the proportions

Oh yeah... That is always a pain. A suggestion that I use alot is using a ruler, mark out a cross. The y axis represents the centre of the face and the X axis represents eye level.

I'll definitely give that a try :D it sounds like a very good idea :D
